Spicy-Honey Chicken Bites

With the 4th of July holiday coming up, it made me think of those times when you really need to go grocery shopping but it would just be a waste with vacation right around the corner.  Sometimes you just need an easy, quick meal that you probably already have the ingredients to make.  Spicy-Honey Chicken Bites are a Lauerland go-to for those types of nights.  Find the recipe below for this tasty (and fiery!) dish that goes well with just about everything.  Hope everyone enjoys their July 4th holiday!

Spicy-Honey Chicken Bites

Ingredients:

  • 4 boneless chicken breasts, cut into small chunks
  • 2 ½ teaspoons apple cider vinegar
  • 5 tablespoons honey
  • 1 ½ teaspoons chili / cayenne powder
  • 1 teaspoon garlic salt
  • 2 teaspoon garlic powder
  • 2 teaspoons paprika
  • Pinch of salt and pepper
  • Light cooking spray

Process:

  1. Turn on broiler to High.
  2. Combine chili powder, garlic salt, garlic powder, paprika, salt, and pepper in a plastic bag (or bowl).
  3. Add chicken to the bowl and toss to coat.
  4. Lay tin foil on a large cookie sheet, spray with cooking spray, and place chicken bites 2 inches apart.
  5. Broil on high for 5-7 minutes on each side (keep an eye on them as oven broilers do vary).
  6. Add honey and vinegar to a bowl and stir with a fork to combine.
  7. Remove chicken from oven and brush the spicy-honey sauce on both sides of the chicken.
  8. Broil 1 minute on each side.
  9. Remove from oven and enjoy!
