Summer Honey Salad Dressing

Now that we have TWO weddings to look forward to, we’re trying to focus a little more on healthy eating – this means more easy summer salads!  I’ve also resolved to start making more salad dressings instead of buying them.  Cost efficient AND healthier… and also super easy (if you haven’t already noticed, easy is a theme in my kitchen). We topped a spinach/romaine mix with cherry tomatoes, sliced pears, and some grilled chicken.  My newest favorite, homemade “Summer Honey” salad dressing, was the perfect addition.  Do you have a favorite homemade salad dressing?

“Summer Honey” Salad Dressing

  • 1 ½ tablespoons honey
  • 1 ½ tablespoons balsamic vinegar
  • 1 ½ tablespoons light olive oil
  • 2 tablespoons freshly-squeezed lemon juice
  • Pinch of salt

    Hiiiiiiiiiiiiiii!!! I used this dressing last night and made a delicious summer salad of:

    Romaine lettuce
    Feta Cheese
    tomatoes
    Bluberries

    and instead of balsamic ving. I used lemon because that’s what I had! it was very good!

    Sounds like a killer salad. My favorite is bacon ranch but maybe that will be replaced by this one!

      I can certainly appreciate a nice bacon ranch, too!! Maybe we’ll try that one homemade next…

    Same but I use taco seasoning instead of chili powder.

      Yum! That’s a favorite of mine too. Look for an upcoming post with a tex-mex salad!
