Will Step for Spaghetti

Jaclyn and I just completed an hour-long step class at the gym and we felt like we earned a high-carb meal in return.  High-carb, yes, but also low in fat!  I’ve been wanting to put a “skinnier” twist on a favorite comfort dish: spaghetti!  I decided to try a lighter baked spaghetti and add in some fire-roasted tomatoes and lots of garlic (a Lauer favorite!)  Check out the recipe below and let me know how you put a twist on your favorite pasta dish!

Lighter Baked Spaghetti (makes 8 servings)


  • 1 pound lean ground turkey
  • 1 package whole-wheat spaghetti
  • ½ cup water
  • ½ medium onion, chopped into small pieces
  • 1 jar of tomato sauce
  • 1 can fire-roasted tomatoes, drained (I used garlic flavored)
  • 4 oz reduced-fat Mozzarella Cheese (part skim)
  • 1 tspn garlic powder
  • 1 tspn garlic salt
  • 1 tbsp Italian seasoning


  1. Preheat oven to 400 degrees.
  2. Cook the spaghetti (al dente), drain, and set aside.
  3. Cook onion with 1 cup of water in a large skillet on medium heat.
  4. Once onion is tender, add ground turkey, garlic powder, garlic salt, and Italian seasoning to skillet.
  5. Cook until the turkey has browned, stirring often and breaking large pieces into crumbles.
  6. Stir in tomato sauce and fire-roasted tomatoes.
  7. Let the mixture simmer for 10-15 minutes and then remove from heat
  8. Mix the turkey/sauce mixture with spaghetti in a Pyrex or large casserole dish.
  9. Sprinkle mozzarella cheese on top of spaghetti dish.
  10. Cover with aluminum foil and bake for 20 minutes.
  11. Remove foil from top of dish and bake for an additional 5 minutes.

    I tried it and it was delicious! It makes enough for 8 people.
