Spicy-Sweet Cucumber Salad

Looking for the perfect side for a summer barbecue? Look no further!  Spicy-sweet cucumbers taste oh-so good served with some corn on the cob and a nice, juicy (veggie) burger.  Adjust the amount of red-pepper flakes to your taste buds – the amount I used in the recipe below may be a little fiery!  This is also really only enough for 3-4 people so double (or triple) the recipe if you’re trying to feed more mouths!

Spicy-Sweet Cucumbers

Ingredients:

  • 1 large cucumber
  • ¼ large onion
  • 1 tsp coarse salt
  • ¼ cup white wine vinegar
  • ¼ cup water
  • 2 tbsp blue agave nectar (or splenda)
  • ½ tsp red pepper flakes

Process:

  1. Peel cucumber and slice thinly into halves.
  2. Sprinkle cucumber with salt and toss.  Refrigerate cucumbers for at least 20 minutes.
  3. Mince onion and set aside.
  4. While cucumbers are in the fridge, combine the vinegar, water, agave nectar, and red pepper in a saucepan and bring to a boil.
  5. Reduce the heat and cook for about 10 minutes.
  6. Remove the mixture from stove and add onion. Allow mixture to cool.
  7. Add vinegar mixture to the cucumbers and toss well.
